Lemon Garlic Chicken with Roasted Vegetables

This simple chicken recipe offers tender meat enjoyment while being gluten-free, lactose-free, and low in fructose. However, it is not completely histamine-free, as lemon and bell pepper may cause reactions in some people with histamine intolerance. The combination of juicy lemon garlic chicken and aromatic roasted vegetables is not only delicious but also easy for people with food intolerances.

Ingredients (for 2 servings):


  • For the Chicken:

    • 2 chicken breast fillets

    • 1 lemon (juice and zest)

    • 3 garlic cloves (finely chopped)

    • 2 tbsp olive oil

    • 1 tsp dried thyme

    • Salt and pepper to taste


  • For the Roasted Vegetables:

    • 1 bell pepper (cut into pieces)

    • 1 zucchini (sliced)

    • 200 g mushrooms (halved)

    • 1 red onion (cut into wedges)

    • 1 tsp paprika powder

    • 1 tbsp olive oil

    • Salt and pepper to taste


Instructions


Step 1:

Prepare the Marinade

In a bowl, mix the lemon juice, lemon zest, chopped garlic, 1 tbsp olive oil, thyme, salt, and pepper.


Step 2:

Marinate the Chicken

Place the chicken breast fillets in the marinade and let them sit for at least 20 minutes (longer is better to intensify the flavor).


Step 3:

Prepare the Roasted Vegetables

Preheat the oven to 200°C (390°F). Place the bell pepper, zucchini, mushrooms, and red onion on a baking tray lined with parchment paper. Add the remaining olive oil, paprika powder, salt, and pepper, and mix everything well.


Step 4:

Roast the Vegetables

Place the vegetables in the preheated oven and roast for about 20-25 minutes, until tender and slightly browned.


Step 5:

Cook the Chicken

While the vegetables are in the oven, heat a pan over medium heat and cook the chicken breast fillets for 5-7 minutes on each side, until fully cooked through.


Step 6:

Serve

Arrange the chicken on plates along with the roasted vegetables and drizzle with some fresh lemon juice if desired.

  • Extend Marinating Time: The longer the chicken marinates, the more intense the flavor will be.

  • Vegetable Variations: You can adjust the vegetables as desired, e.g., add sweet potatoes to make the dish more filling.
