This simple chicken recipe offers tender meat enjoyment while being gluten-free, lactose-free, and low in fructose. However, it is not completely histamine-free, as lemon and bell pepper may cause reactions in some people with histamine intolerance. Ingredients (for 2 servings):
For the Chicken:
2 chicken breast fillets
1 lemon (juice and zest)
3 garlic cloves (finely chopped)
2 tbsp olive oil
1 tsp dried thyme
Salt and pepper to taste
For the Roasted Vegetables:
1 bell pepper (cut into pieces)
1 zucchini (sliced)
200 g mushrooms (halved)
1 red onion (cut into wedges)
1 tsp paprika powder
1 tbsp olive oil

Instructions
Step 1:
Prepare the Marinade
In a bowl, mix the lemon juice, lemon zest, chopped garlic, 1 tbsp olive oil, thyme, salt, and pepper.
Step 2:
Marinate the Chicken
Place the chicken breast fillets in the marinade and let them sit for at least 20 minutes (longer is better to intensify the flavor).
Step 3:
Prepare the Roasted Vegetables
Preheat the oven to 200°C (390°F). Place the bell pepper, zucchini, mushrooms, and red onion on a baking tray lined with parchment paper. Add the remaining olive oil, paprika powder, salt, and pepper, and mix everything well.
Step 4:
Roast the Vegetables
Place the vegetables in the preheated oven and roast for about 20-25 minutes, until tender and slightly browned.
Step 5:
Cook the Chicken
While the vegetables are in the oven, heat a pan over medium heat and cook the chicken breast fillets for 5-7 minutes on each side, until fully cooked through.

Serve
Arrange the chicken on plates along with the roasted vegetables and drizzle with some fresh lemon juice if desired.
